Detailed Descriptions
BOUDIN - Comes 2 links to the pound. This is the number one seller. We sell two thousand pounds a day. It is pork meat, a little pork liver, onions, bell peppers, red pepper, black pepper, salt, and msg. cooked in a big boiling pot for a long time... Once cooked it is ground then mixed with rice, green onions, and more red pepper, black pepper, salt, and msg. After is has all been mixed it is stuffed into a sausage like casing.
PARTY LINK BOUDIN - The same as Boudin but made into smaller easier to handle links. (Special Order Only)
SMOKED BOUDIN - The same as Boudin but once made it is put into a smoke house to give it a smoke flavor.
CRACKLINS - Cracklins are made from pork skin that consists of skin, fat, and meat. The pork skin is cut up into cube sized peices then dropped into hot hog lard (grease). Then cooked for about an hour. It is then cooled to room temperature and placed into a cooler. Once it is needed to sell, it is taken out of the cooler and placed back into the hog lard until ready to sell. When removed Best Stop Supermarket seasoning is sprinkled on top. We sell about 2500 pounds of cracklin a day... C'est Bon!!!
HOG HEAD CHEESE - Made from pork meat, pork skin, onions, bell peppers, green onions, red pepper, black pepper, salt, and msg. Unlike years agothe hog's head isn't used to make the cheese. Once cooked gelatin is added to keep it together. Usually eaten on crackers or bread. Served Cold

ANDOUILLE - Pork meat that is only ground once. It is not ground as fine as regular sausage. Then seasoned with The Best Stop Seasoning, msg, and curing salt. It is then stuffed into beef casing which is bigger than traditional sausage casing usually cooked in a gumbo or put in beans.
MARINATED PORK - Cubed size pork meat that is marinated with meat tenderizer, oil, vinegar, water, and The Best Stop Seasoning. It is usually browned to make a gravy or put into a jambalaya.
MARINATED CHICKEN - Cubed size chicken meat that is marinated with meat tenderizer, oil, vinegar, water, and The Best Stop Seasoning. It is usually browned to make a gravy or put into a jambalaya.

CHAUDIN - The lining of a pork stomach that is stuffed with seasoned pork meat then seasoned on the outside. Usually cooked like a roast in the oven for 2-3 hours.
DEBONED STUFFED FRYER - A deboned fryer that is stuffed with seasoned pork meat then seasoned on the outside. Usually cooked like a roast in the oven for 2-3 hours.
STUFFED PORK CHOP - A pork chop cut an 1 1/4" that is stuffed with seasoned pork meat then seasoned on the outside. Usually cooked in a browning bag in the oven for 1 1/2 hours. Or on the BBQ pit.
STUFFED QUAIL - Quails stuffed with seasoned pork meat then seasoned on the outside. Usually cooked on the BBQ pit or browned to make a gravy.
PORK BACK BONE - The back bone of a pig. It can be cut up and seasoned to cook in a stew or left whole to cook as a roast.
